Female and juvenile males will be yellow, black, and white. Sometimes sub dominate males will stay yellow to immitate a female, thus avoiding the aggressiveness of the dominate male. Males will be black with a light blue or dirty yellow color. It may just change color with its' mood or because of the decor in the tank, trying to blend in. From my experience with them, I have never experienced mine changing color like you described.
